Makes 6 servings
Ingredients:
6 skinless boneless chicken breasts
1/4 cup of butter
1 tbsp of cumin
2 to 3 hot peppers such as jalepeno or chili pepper ( or margos famous garlic chili hot sauce.. As much as you can handle)
1 tbsp grated fresh ginger
250 ml whipping cream
14 ounce can of tomato sauce
1/2 tsp of salt
5 cups of baby spinach
1. slice each chicken breasts in to 1 inch cubes. melt butter in large wok type sauce pan over medium high heat, add chicken and sprinkle with cumin.
Turn often until chicken pieces are golden. Remove chicken to a bowl.
2.While chicken is cooking finely chop peppers including seeds, grate ginger.
3.when all of the cooked chicken is removed to a bowl pour cream into same pan, then stir in tomato sauce, hot peppers, ginger and salt. Return all of chicken and juices to pan, bring to a boil. Then cover and simmer over a low heat stirring occasionally until chicken is cooked thoroughly about 10 to 15 min.
Stir in spinach heat just to wilt spinach.
Remove from heat.
Fantastic!! with basmati rice.
